In Japan, Ayu is also known as a summer delicacy and called ‘kougyo‘ (香魚), literally translated as ‘fragrant fish’ in Japanese .
Shioyaki (grilled with salt) is the most popular way to cook Ayu, which is highly nutritious and can be eaten in its entirety. Even the internal organs of the fish can be eaten. Small Ayu are suitable for tempura and deep frying.
