アカムツ , blackthroat seaperch or rosy seabass is called “akamutsu” in Japan .
Blackthroat Seaperch is a premium in-season fish in fall and winter . It's extremely fat , rich in taste and tender meat . It is even more tasty after searing .
赤鯥作為高級魚料理之一,其油脂含量非常豐富,上等的口感,不管是刺身、鹽烤、煮、或是蒸都十分美味。
赤鯥是一種暖水性魚類,生活於較深海區,魚皮呈紅色,與喜知次並稱兩大高級紅皮魚。由於喉部漆黑,也可稱之為「喉黑魚」,這個俗稱在日本使用更為廣泛。體形呈長卵形而側扁,眼大,體色為紅色,腹部銀白色,油脂含量豐富,味道鮮美。
