About the Product

Hamachi is a species of jack that’s often called yellowtail or buri. It’s a super popular fish in both Japan and the US .  

Farmed yellowtail is consistently light colored because it is high in fat . Cooked meat is white and firm with a sweet, mild flavor. The high oil content gives the flesh a buttery texture.

Hamcachi mostly served raw, thinly sliced for sashimi, it is delicious lightly seared or marinated and then roasted, grilled or braised. It can also be simply seasoned with salt for grilling; salt and high heat bring out the sweet, delicate flavor .

What is Ikejime ?

Ikejime (活け締め) is a method of killing fish which also maintains the quality of its meat.

Harvested with the ike jime method, fish can be refrigerated for weeks when safely stored in a vacuum sealed bag or airtight container. This process not only makes the fish taste better – it also lasts longer, has zero smell, and reduces waste as it won’t spoil nearly as fast, allowing you to respect the fish and the fishery to the maximum ability.
